Easy to fix low carb fried eggs

This is a great low carb, low fat dish that can be prepared in about 2 mintues. It is a good substitute for the high carb breakfasts like cereals that are usually eaten only because they are quick and easy. You will find that the protein helps stave off hunger longer as well.

Ingredients:

Non-stick vegetable spray (butter flavored)
2 eggs
Salt and pepper, optional
1 tbsp. ketchup (catsup), optional

Directions:

Small omlete pan.

Pre-heat a non-stick omelet pan on medium heat with a lid from a pot to cover it. The lid will help it heat faster and a hot pan will help the eggs bubble like regular frying in grease. Coat with vegetable spray. Add eggs. Salt and pepper, if desired. Cover and cook for about 2 minutes. When covered, you do not need to turn the eggs and the non-stick pan should help them slide onto the plate.

If you like your eggs sunny side up, uncover them before the whites finish cooking. They will slide out of the pan so easily you are virtually garanteed not to break the yokes.
